The best apples for apple cake are firm apples that hold their shape while baking and have enough tartness to balance the sweetness of the cake.

Granny Smith apples are our favorite because they’re firm and tart. Honeycrisp apples are another great option if you prefer a sweeter apple flavor with plenty of crunch. We use the same apples in our homemade apple pie and apple crisp, so if you have extras, you know what to make next!

You can also use a combination of the two. Avoid very soft apples, which can become mushy as the cake bakes.

How to Make This Apple Cake Recipe

This apple cake comes together in just a few simple steps, and you can make the caramel sauce while the cake is in the oven.

  1. Prep: Preheat the oven to 350°F and spray an 8×11-inch baking dish with nonstick cooking spray.
  2. Cream the butter and sugars: Using a stand or hand mixer, beat the softened butter, sugar and brown sugar until smooth.
  3. Add the wet ingredients: Mix in the eggs and vanilla until just combined.

Why is my apple cake batter so thick?

Why didn’t the top of my apple cake get chewy and caramelized?

  • ¼ Cup Brown Sugar

  • ¾ Cup Brown Sugar

  • ½ teaspoon Vanilla Extract
  • ¼ teaspoon Fine Sea Salt
  • Preheat an oven to 350 ℉.

  • Spray an 8×11 inch pan with nonstick cooking spray.

  • In a mixing bowl, cream together the sugars and butter until smooth. We prefer to use a standing or hand mixer. It's important the butter is softened.

    1 Cup Sugar, ½ Cup Butter, ¼ Cup Brown Sugar

  • Add the egg and vanilla, mix until just combined.

    2 Large Eggs, 2 teaspoons Vanilla

  • In a separate bowl, whisk together the flour, salt, nutmeg, cinnamon, cloves, baking soda and baking powder.

    2 Cups Flour, ¾ teaspoon Salt, ¾ teaspoon Nutmeg, 2 teaspoons Cinnamon, ¼ teaspoon Ground Cloves, ½ teaspoon Baking Soda, 1 teaspoon Baking Powder

  • Stir the dry ingredients into the wet ingredients, and using a rubber spatula, fold the apples into the mixture.

    3 Cups Granny Smith

  • Pour the batter into the baking dish and bake for 35-45 minutes or until a toothpick comes out of the center clean. Ours took 40 minutes.

  • Meanwhile, in a saucepan over medium heat, add the sugars, cream, butter, salt and vanilla.

  • Cook, stirring occasionally until smooth.

Cake without the sauce will keep for 3-4 days in the refrigerator.  Add sauce when serving.
