Soft and citrusy lemon blueberry cookies are easy to prepare and bake quickly, yet still feel out-of-the-ordinary enough to make them a special treat.
Ingredients
- ½ cup butter, softened
- 1/3 cup granulated sugar
- 2 large egg yolks, room temp
- 1 teaspoon grated lemon peel
- 1 ¼ cups all-purpose flour
- ¼ cup corn starch
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 1/3 cup dried blueberries

Directions
- Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper or spray the cookie sheet.
- Combine butter and sugar in a large bowl. Beat at medium speed until fluffy. Beat in egg yolks and lemon peel.
- Combine flour, corn starch, baking powder, and salt in a medium bowl.
- Gradually add flour to the butter mixture. Beat at a low speed just until crumbly.
- Stir in dried blueberries.
- Using your hands, form the dough into a ball. On a sheet of wax paper, knead the dough until it holds together. Divide the dough into half. Form each half into a disc shape, and cut into fourths.
- Roll each quarter into a disc, and again cut into fourths. Each half will now give you 16 pieces. You’ll have 32 cookies total.
- Roll each piece into a ball.
- Place 2″ apart on a cookie sheet.
- Flatten each ball with a glass dipped in sugar.
- Bake at 375 for 12-14 minutes or until cookies are lightly browned around the edge.
Cookies Variations
- Add a topping: A lemon glaze would punch up the citrusy flavor of your blueberry lemon cookies, but other icings and toppings would also work wonderfully. Try a cream cheese frosting or an easy vanilla buttercream frosting.
- Make a frozen treat: What better way to use up extra cookies than to slap them together with some ice cream in the middle? Try making ice cream sandwiches with lemon gelato or blueberry ice cream, or get tropical and make the sandwiches with vegan coconut ice cream.
- Use different fruit as the mix-in: Don’t have blueberries? You could swap in raspberries or blackberries or use your favorite dried fruit, such as cherries or figs.
