Summer is the time to embrace the wide array of produce in season so try making a salad right from your home garden with this delicious cucumber and tomato combo. This salad makes the perfect light and easy snack that will keep well in the fridge, waiting for whenever you are feeling peckish. It features Tahini, which is a staple, Mediterranean condiment made from ground sesame seeds and has been enjoyed for centuries. It also appears in classic Mediterranean dishes such as halva and baba ghanoush. Tahini Salad Dressing Ingredients

  • ¼ cup sesame tahini
  • 2 Tbsp. of lemon juice
  • 2 Tbsp. extra virgin olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp. of salt
  • 3 tbsp water

Cucumber Tomato Salad Ingredients

  • 2 medium onions, chopped
  • 2 cups tomatoes, chopped
  • 2 Persian cucumbers, peeled and diced
  • 4 green onions, finely chopped
  • 1/2 cup chopped fresh parsley

Instructions

  1. First whisk all the dressing ingredients together except the water. Then add water to dressing until you achieve a creamy consistency. Feel free to season to your preferred taste.
  2. Put diced and chopped tomatoes, cucumbers, onions and parsley in a medium sized mixing bowl.
  3. Drizzle the tahini dressing over the chopped ingredients and mix well until all chopped ingredients are covered.
  4. Use to top anything you want! You can take this recipe to the next level by adding some pita bread or cooked falafel.
