Anyone else tired of the same boring dinner recipes? I need an easy chicken dinner but I’m tired of the same boring chicken. 

I’m so tired of making the same chicken dinner! So I set out to create something new for anyone else that’s trying to make a quick and easy dinner with boneless, skinless chicken.

My qualifications were it had to be:

I tried a few different chicken recipes from the top bloggers but they ended up laborious, flavorless or kind of dry. I hate dry chicken. Which meant, I had added a new category to my checklist, cannot be dry! And my friends, after months of testing I ended up back at an old, lost recipe from our newlywed years. You are going to be OBSESSED!

How to Make Honey Curry Chicken

One of my favorite things about this recipe is that almost all the work happens in the oven. Just whisk together the sauce, pour it over the chicken, and let it bake until it’s perfectly tender.

  1. Make the Sauce: Melt the butter, then whisk in the honey, Dijon mustard, curry powder, chicken seasoning, lemon pepper, and salt.
  2. Assemble: Place the chicken breasts in a greased baking dish and pour the sauce evenly over the top.
  3. Bake: Bake uncovered at 350°F for about 1 hour, basting once or twice during cooking, until the chicken reaches 165°F.
  4. Serve: Slice or shred the chicken and spoon plenty of the sauce over rice before serving.

I’m a big fan of prepping a meal in the morning or afternoon before the rush of homework and sports begin. In fact, this is one you could even prep the night before and throw in the oven the next evening. It’s a set it and forget it meal! 

The hardest problem for me to solve with dinner isn’t the main dish, it’s usually sides. Especially if i’m in a dinner rut or overly busy and stressed, I find myself saying, I don’t know what to serve with chicken.

I’ve got you covered there as well. Here’s what my family likes to serve with chicken. 

Slow Cooker & Instant Pot

Want to make it even easier? This recipe works well in both the slow cooker and the Instant Pot too.

Slow Cooker

Add the chicken and sauce to the slow cooker. Cook on LOW for 4–5 hours or HIGH for 2–3 hours. Shred if desired before serving.

Instant Pot

Cook on HIGH pressure for 8–10 minutes (depending on thickness), followed by a 10-minute natural release before quick releasing the remaining pressure. Remove the chicken and shred it, then return it to the sauce.

Variations

This recipe is easy to customize depending on what you have in the fridge or pantry.

  • Use chicken thighs.
  • Add sliced onions.
  • Add carrots or potatoes.
  • Make it spicy with cayenne.
  • Add garlic.
  • Finish with fresh cilantro.
  • Add coconut milk for a creamier sauce.
  • Stir in a splash of lime juice before serving.

Storing and Reheating

This is one of those recipes that’s almost better the next day after the flavors have had time to meld together.

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze for up to 3 months.

Reheat gently in the microwave or covered in a 300°F oven with a spoonful of extra sauce to keep the chicken moist.

Honey Curry Chicken FAQs

Can I use chicken thighs?

Yes! Chicken thighs stay extra juicy and work perfectly in this recipe. Oh they will be so tender, juicy and way more flavorful! However, just remember dark meat is better chopped than shredded like the breast.

Is honey curry chicken spicy?

No. Curry powder is warm and aromatic rather than hot. This curry chicken recipe is not spicy, it’s mild. But, see below if you’d like ideas on how to make it spicy!

What curry powder should I use?

Because this recipe is family and kid friendly I really don’t think it matters which yellow curry powder you use. I would avoid a paste for sure though. If I’m going for more authentic I love Pure Indian Foods. They make a really lovely curry powder. 

Can I make this ahead of time?

You can, you should and I DO! I often assemble ahead of time, cover with foil and bake when I’m ready. Just be sure to pull your chicken out 5 minutes ahead of time before baking so it’s not freezing cold.

Can I shred the chicken?

Absolutely. The chicken shreds beautifully and is delicious served over rice or tucked into wraps.

Can I freeze it?

Yes. Freeze the cooked chicken and sauce together for up to 3 months.

Want to Try Curry But Don’t Like Spicy Food? Make This Honey Curry Chicken

Now, before you panic, I’ve read your emails about curry: I want curry, but I’m afraid it will be too spicy.

Rest assured, I tested this to be a mild curry recipe thanks to the butter and honey. But could you spice it up? Absolutely! To make your curry have more of a bite try adding gochujang, serranos, jalapeños, habaneros, leaving the seeds in for more heat. Don’t have peppers?

  • Stir in cayenne pepper, standard red chili powder, or crushed red pepper flakes.

Feeling fancy? Mix in a hot curry paste, chili oil, or a spoonful of prepared chili garlic sauce.

Here was the problem though. I’ve solved two picky eating children, but I still have a third holding onto the, “I don’t like that” line. Getting our 10 year old to try it AND like it, that was going to be an obstacle.

  • 4-6 Chicken Breasts
  • ½ Cup Butter
  • ½ Cup Honey
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Curry Powder

Make the Sauce

  • Melt butter in a small saucepan.

    ½ Cup Butter

  • Add all remaining ingredients and whisk to combine.

    ½ Cup Honey, 1 Tablespoon Dijon Mustard, 1 teaspoon Curry Powder, 1 teaspoon Chicken Seasoning, ½ teaspoon Lemon Pepper, ½ teaspoon Salt

Assemble

  • Place chicken in a greased baking dish and pour the sauce over the chicken.

    4-6 Chicken Breasts

Bake

  • Bake uncovered for 1 hour at 350℉, basting occasionally.

Shred and Serve

  • Shred the chicken and serve over rice.
