Three simple ingredients are all that stand between you and the most incredible homemade caramel sauce of your life.

  • Sweetened condensed milk: the star of the show and the only thing you truly need. The slow heat transforms it into a deep, rich, golden caramel with zero fuss.

How to Make Caramel with Condensed Milk

I’ve stood over the stove top, sweat dripping down my back as I tried for the third time in a row to produce a silky, yet thickened caramel sauce. This slow cooker caramel sauce takes the stress out of trying and you turn out something delicious every time! This is truly one of the easiest recipes you will ever make. The slow cooker does everything.

  1. Mix: Stir the sweetened condensed milk, salt, and vanilla together until well combined.
  2. Fill: Pour the mixture into 7 to 8 jelly jars, filling each to about half an inch from the top. Secure the lids and rings.
  3. Submerge: Place the jars in the slow cooker and cover completely with water.
  4. Cook: Cover and cook on low for 8 to 12 hours. The longer it cooks, the thicker and darker the caramel will get. Watch that the water level doesn’t get too low. 
  5. Seal: Remove the jars carefully and let them cool. They will self-seal and can be stored in a cool place for 6 to 12 months.

That is it. Walk away, let the slow cooker work its magic, and come back to sealed jars full of the most beautiful homemade caramel you have ever seen.

Common Issues with Homemade Caramel Sauce

Let’s go over some of the common problems of using sweetened condensed milk to make a caramel sauce, or in our house we call it, dulce de leche. 

Why does my caramel turn grainy?

I have a few jars of caramel sauce in my pantry at all times, but one of those jars has a secret. My caramel turned out grainy. 

This is typical crystallization that can happen when you are making homemade caramel. And in fact, even when making sweetened condensed milk caramel in the slow-cooker your sauce can become grainy from those darn sugar crystals. 

Sugar crystals work like magnets, so once there’s one, there will be more. Especially if you’re working stovetop, but in this case, because we are using sweetened condensed milk you have a lower chance of that happening.

How to Avoid Grainy Caramel

  1. Limit Moving the cans: Avoid lifting the lid, or moving the cans. Once that water is hot you need to set the cans and forget them.
  2. Allow Even Cooling: I know you’re excited, but let that caramel cool before opening the cans. You can either gently lift them out of the slow cooker with tongs to rest on a hot pad or place them in cold water for 10-15 minutes. 

How to Fix Grainy Caramel Sauce

Ok, it happened, you ended up with little sugar crystals in your caramel sauce. Now what do you do? 

  1. Try reheating the caramel with a little extra water or cream in a saucepan to melt the sugar crystals back down. Be sure to keep the caramel in a solid mass as any caramel on the side of the pan may retain the crystals and cause the issue all over again. 
  2. If that happens and a little caramel gets on the pan, use a damp paper towel to clean it off. 

My caramel is too thick after it cools.

  • You waited so long and your stomach was growling in anticipation only to find a mass of caramel vs a pourable one. What went wrong? Why is your caramel sauce so thick?
    • A: First, it’s important to remember that caramel naturally becomes considerably thicker as it cools. That means that sometimes all you have to do is warm it slightly to thin it out. But if not, then let’s problem solve it!
  • If that didn’t fix it and your caramel is still thick:
    • A: Place the caramel in a saucepan with a splash of heavy cream or water and reheat over medium low heat. Make sure you’re stirring constantly until it melts back into a smooth sauce.
    • Don’t make this mistake if your caramel is too thin!
    • Sometimes the opposite happens. If your caramel is too thin it merely needs longer with the heat. But WAIT!! First, allow the caramel too cool completely before putting it back on the heat otherwise you will not get a good picture of just how thick it is. 
    • Because this is in a can, just scoop it into a dish over a water bath or straight into a saucepan over medium low heat, stirring constantly until simmering and thickening. 

My caramel didn’t turn brown

  • If you open the cans and they look like a more golden cream vs brown you didn’t cook the cans for long enough. Follow the same method for thin caramel sauce. 
  • How long will Caramel Sauce Keep for
  • In the fridge 2-3 weeks in a sealed container. 
  • In sealed jars it will keep  12-18 months.

You said you Call it Dulce De Leche

Techinically because we are using sweetened condensed milk that is the hispanic version of caramel, but elsewhere, you’re right, they are different products.

Substitutions and Variations

This recipe is wonderfully simple, but there is a little room to play. If you love a bold salted caramel flavor, bump up the salt to suit your taste. For a deeper, almost toffee-like caramel, cook it closer to the 12-hour mark. For a lighter, more pourable sauce, pull it at 8 hours. You can also skip the vanilla if you prefer a more classic, pure caramel flavor. Or try other extracts like coconut, almond, or cinnamon to add a twist to the flavor.

Can You Make Caramel Sauce Ahead of Time?

Yes, you can make caramel months in advance and store it in mason jars in the fridge for 2-3 weeks. If you’d like to store it longer, here’s how to can caramel sauce. 

How to Can Caramel Sauce

This is not an approved method by the FDA, but it’s what my mom and I have always done. 

  • Prep the jars: Wash and sterilize small mason jars and lids to protect your family from disease.
  • Fill with sweetened condensed milk: Pour the uncooked, room-temperature sweetened condensed milk directly into the jars, leaving 1 inch of space.
  • Clean the rims: Wipe the glass rims perfectly clean with a cloth to avoid sugar crystals. Secure the two-piece canning lids until tight but not overtightened.
  • Cook in a slow cooker: Place the jars flat into a slow cooker then fill with in room-temperature water until the water covers the jars 1 to 2 inches over the tops of the lids.
    • DO NOT put the cold jars into hot water as the glass could explode!
  • Cook on Low: Cover the slow cooker and cook on LOW for 8 to 10 hours. 
  • Cool and check the seal: Carefully lift the hot jars out using tongs and place them on a towel to cool for up to 24 hours. Listen for the classic, “pop” as they form a vacuum seal. 

Storing and Reheating Caramel Sauce

Because the jars self-seal during cooking, this caramel sauce keeps in a cool, dry place for 6 to 12 months unopened. Once a jar is opened, store it in the refrigerator and use it within a couple of weeks. To bring it back to a pourable consistency, simply warm it gently in the microwave or set the jar in a bowl of warm water for a few minutes.
