This Hot Honey Chicken Sandwich is made with marinated grilled chicken breasts, toasted buns, a creamy hot honey mustard sauce, and fresh toppings such as lettuce, pickles, coleslaw, or pepper jack cheese.

Made with my favorite hot honey and grilled to perfection, it’s quickly replacing a classic hamburger as my go-to sandwich for barbecueing!

Ingredient Notes

mustard , oil , hot honey , basil , hamburger buns , chicken , vinegar , mayonnaise , chil flakes , garlic powder , salt and pepper with labels to make Hot Honey Chicken Sandwich
  • Chicken Breasts: Pound the chicken to an even ½-inch thickness so it cooks at the same rate and stays tender on the grill. Large chicken breasts can be sliced in half horizontally before pounding.
  • Buns: Brioche rolls add a soft, slightly sweet flavor that pairs well with hot honey, while regular hamburger buns are sturdy and budget-friendly.
  • Hot Honey: Used in both the marinade and the sauce, it adds sweet heat throughout the sandwich. Choose a mild or extra-spicy variety depending on your preferred heat level.

Variations

  • No Hot Honey: Use regular honey with a pinch of chili flakes, cayenne, or a little hot sauce, or follow this hot honey recipe to make your own.
  • Milder Sandwich: Skip the chili flakes and use lettuce, tomato, and pickles instead of pepper jack.
  • Cheesy Version: Add pepper jack, cheddar, or provolone after grilling so it softens over the hot chicken.

How to Make a Hot Honey Chicken Sandwich

  1. Whisk together the hot honey sauce ingredients.
  2. Pound the chicken breasts and whisk together the marinade ingredients.
  3. Add the chicken to the marinade and toss to coat. Let marinate.
  4. Heat the grill and cook the chicken (full recipe below).
  5. Spread the sauce on the buns, add the chicken and extra toppings before serving.
  • Marinate: Marinate for at least 30 minutes, but not for more than 4 hours, as the vinegar can change the texture of the chicken.
  • Oil the Grill Grates: Oil the grill grates before adding the chicken to help prevent sticking.
  • Use a Thermometer: Use an instant-read thermometer and cook the chicken to an internal temperature of 165°F.
  • Let the Grilled Chicken Rest: Allow the chicken to rest for a few minutes before assembling so the juices settle.
