- Grape Tomatoes: Hold their shape well and add juicy sweetness. Cherry tomatoes can be used instead.

- Feta Cheese: Adds creamy, salty flavor throughout the salad. Add more to taste or swap in mozzarella pearls for a milder option.
- Greek Salad Dressing: Bottled dressing makes this recipe quick and easy, but any vinaigrette-style dressing works well.
- Variations: Try adding extra vegetables like zucchini, broccoli, artichoke hearts, or carrots. For a heartier version, mix in grilled chicken, chickpeas, or cubed salami.
How to Make Spaghetti Salad

- Toss with the dressing and top with feta. Then cover and chill until ready to serve.
- Cook Pasta Al Dente: Cook the spaghetti al dente so it does not get soft after chilling.
- Rinse the Pasta Well: Rinse with cold water to stop the pasta from cooking and to keep it from clumping.
- Dress the Salad Generously: The spaghetti will absorb the dressing as it sits, so dress the salad generously. Or stir it before serving and refresh with additional dressing.
- Cut the Vegetables Small: Cut into small pieces so they mix through the pasta instead of sinking to the bottom.

- ▢ 1 pound spaghetti
- ▢ ¾ English cucumber diced
- ▢ 1 pint grape tomatoes halved
- ▢ 1 cup diced bell pepper any color
- ▢ ¼ cup sliced pitted olives black olives or kalamata olives
- ▢ ⅓ cup crumbled feta cheese more to taste
- ▢ ¼ cup diced red onion
- ▢ 1 tablespoon chopped fresh parsley
If making homemade dressing, combine all ingredients except oil in a bowl. Slowly drizzle oil while whisking. Set aside.
Cook spaghetti in a large pot of salted water until al dente according to package directions. Drain and rinse under cold water.
Combine all ingredients in a large bowl. Add dressing and toss.
Refrigerate at least 2 hours before serving.
Rinse the spaghetti to help it stop cooking and keep it from sticking.
Use any bottled vinaigrette dressing in this recipe or your favorite homemade Greek inspired dressing.
As it sits, the pasta will soak up the dressing, so dress generously. Flavors will blend once the pasta salad has had a chance to sit.
